Green Sandwich Spread Flavoured with Thyme

This sandwich spread is so delicious served upon toasted dark pumpernickel bread and then topped with oven dried tomatoes and lots of cracked black pepper. Also juicy red bell pepper and a big cup of tea makes this a perfect snack or light lunch. Simple delicious things like these make me so happy!

Speaking of happiness... The older I get, the more I realize what truly brings me happiness. It's not money, materialistic things or social status. Instead it's simple things like laughter with great people, sunshine, a good cup of tea, a beautiful song, time spent in nature, delicious food, yoga, peace of mind, plating with my niece and so on. Ordinary things like these are what in the end makes up life and which make life beautiful in all their simplicity.

Green Sandwich Spread Flavoured with Thyme

1 small bowl

1 1/4 cup frozen green soy beans (shelled)
1 small clove of garlic
Juice of 1/2 lemon
1/2 tsp herbal salt
1/5 tsp black pepper
2 tbsp olive or flaxseed oil
1 tbsp water
1 tsp dried thyme

1. Thaw the soy beans according to the instructions on their package.
2. Blend all the ingredients in a food processor until the spread is completely smooth.
