I love turmeric and use it all the time in my cooking. This golden yellow root has an anti-inflammatory effect in our bodies and it's also incredibly high in antioxidants. Make sure to eat it with some black pepper as this may increase your body's absorption of all the healthy components of the turmeric. Ginger is also said to be anti-inflammatory and may also be soothing on our digestive tract.
Then there's of course garlic, which according to some studies can prevent or relieve a cold. Garlic is also rich in antioxidants and may have a positive effect on blood lipids.
Sweet potatoes are a fantastic source of beta-carotene which is converted to vitamin A in our bodies. To be able to fully absorb vitamin A, which is a fat-soluble vitamin, you need to eat some fat in the same meal. This soup is virtually fat-free which makes it a good idea to serve some source of healthy fats on the side. No need to complicate things though, I simply served my soup with some mashed avocado on crisp-bread and a kale salad with flaxseed dressing.
Fresh ginger and turmeric can be replaced with dried ground spices. Start with 1 tsp of each and add more if necessary.
Super Immunity Soup
1 cup dried red lentils, rinsed
6 1/2 cups water
2 medium sized sweet potatoes, peeled and chopped into small pieces
2 medium sized regular potatoes, peeled and chopped into small pieces
1-2 cloves of garlic, finely grated
Small piece of fresh ginger, finely grated
Small piece of fresh turmeric, finely grated
4 bay leaves
Herbal salt and black pepper according to taste
Juice of 1 small lemon
1. Put all the ingredients except for the lemon juice in a large saucepan. Bring to the boil, then lower the heat and let the soup cook with the lid on for about 30 minutes.
2. Remove the saucepan from the heat. Blend the soup smooth with a hand held blender. Alternatively, you can mash parts of the soup with a regular whisk to keep the soup chunky (this is my favourite option).
3. Add the lemon juice, stir, and serve!
