Avocado & Chickpea Mash

This recipe (if you could call it that) is incredibly simple to make in just a couple of minutes. Simply mash some chickpeas with avocado, spices and a little olive oil, and you have a healthy spread which tastes divine on top of toast. This sandwich spread is really filling too since it contains lots of healthy fats, protein and fibre-rich carbs.

The bread in the pictures is a home-made oat and sesame bread which turned out so good. Recipe coming later!

Avocado & Chickpea Mash

1/2 cup chickpeas
1 ripe avocado
1/2 squeezed lemon
1 tsp olive oil
Salt and peppar according to taste
Coarsely chopped fresh thyme according to taste

Roughly mash the chickpeas into a bowl with a fork. Add the rest of the ingredients and mash together. Serve on toast and top with more fresh thyme.
