Gingerbread Granola

It's only two days until Christmas Eve, crazy isn't it? Tomorrow me and my love are taking the train to celebrate with my family for a few days which I look forward to so much.

Today I share my last Christmas recipe for this year. I always have to have granola at home (hello smoothie bowls) and this gingerbread flavoured version brings the perfect Christmas vibes to my breakfasts. In the picture above it's served on top of a delicious berry chia pudding

Gingerbread Granola

2 1/2 cup (5 dl) rolled oats
2 tsp gingerbread spices*
2 tbsp melted coconut oil
2 tbsp coconut sugar
1/2 cup (1 dl) raw or roasted cashews
1/2 cup (1 dl) raw or roasted walnuts
1/2 cup (1 dl) coconut chips
1 cup (2 dl) raisins

1. Warm the oven to 125 degrees C/255 degrees F.
2. Mix together the oats, spices, coconut oil and coconut sugar in a bowl.
3. Spread out the mixture on a baking tray covered with parchment paper. Roast the granola in the oven for about 30 minutes. Stir it after about halfway through.
4. Chop the nuts coarsely and stir them into the granola along with the coconut chips and raisins. Let the granola cool down completely before putting it in a jar.

* I use a store-bought gingerbread spice mix, but you could easily make your own mix of ground cinnamon, ginger, cloves and cardamom (in the proportions you like).
